Csopak's vineyards have outstanding natural assets even on the global scale. The Tamás Winery, known for organic farming and its wooden wine barrels, is situated exactly here, adjacent to the Jásdi Wine Terrace - but these are far from being the only peculiarities of the place. This is also home to a really nice family and a kitchen that produces special syrups and chutneys.

It takes a mere 10 minute bike ride from the Csopak train station to find the Tamás Winery, which is considered to be one of the iconic enterprises around here. Small wonder: this is the birthplace of the (perhaps) best liked wines of the area and the equally popular home-made syrups and chutneys that are now available countrywide, including the crowd favourite lavender-based concoctions.

But this is not only a manufacture, it is also a pleasant family home, where everything is handcrafted with the utmost meticulousness, in an attempt at the delivering the highest quality possible. 

In the frame of a summer walk with a glass of wine in the hand in front of the picturesque backdrop of a Balaton panorama, our host Ervin Tamás talked to us animatedly about the winery he has put together throughout the years. He explained that they cultivate the vineyard themselves and use only their own harvest to make wine. The family also lays special emphasis on the protection of the environment.

He added that the environment-conscious approach for them means that they refuse to use the majority of today's modern additives and instead rely on their experience in the processes. As a result of this conscious and dedicated  work, the immune system of the plants has become so strong that they hardly need to spray.

The close attention to detail means that they don't use synthetic preservatives, artificial colouring, flavour enhancers or aromas. On the contrary. They even set up bird drinkers and created ideal nesting conditions for birds, so that they stick around and help repel pests - they even thanked the winged helpers with the blackbird logo. This makes the use of insecticides unnecessary.
